To manage settings from Project, click on the Settings tab.

The release process can be customized from Project Settings, where you can follow the sprints using release or without using release. By default system would take Follow Release Process into consideration, hence it would be ticked.

To not follow release process, untick the Follow Release Process.

The Project settings also provide an option to calculate the remaining hours automatically. By default system would not take calculation the remaining hours automatically into consideration, hence it would be off. To calculate the remaining hours automatically, turn ON the toggle.

You can restrict the team member from manage remaining hours by making it non-editable. To do so turn ON the toggle as shown below.
